Wash and dry all produce.

In a #small bowl{}, combine @red onion{1%unit}(minced), half the @tomato{1%unit}, half the @cilantro{2%tbsp}, and juice from half the @lime{1%unit}. Season with @salt{½%tsp} and @black pepper{½%tsp}.

Heat a drizzle of @olive oil{2%tbsp} in a #large pan{} over medium-high heat. Add sliced onion, @long green pepper{1%unit}, and a big pinch of salt. Cook, stirring occasionally, until browned and tender ~{8%minutes}.

Place @flour tortillas{4%pieces} on a clean work surface; sprinkle one half of each tortilla with @Mexican cheese blend{1%cup} and @pepper jack cheese{1%cup}. Top with cooked @shrimp{8%oz} and the roasted vegetables.

Fold tortillas over; wash out pan used for veggie filling and return to medium-high heat with a drizzle of olive oil.

Cut tortillas into wedges; divide between plates and top with @guacamole{1%cup} and salsa. Drizzle with @sour cream{½%cup} and @southwest spice blend{1%tbsp}. Serve with remaining lime wedges on the side.
